Ingredients

  • 2 pounds Baby potatoes
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Fresh rosemary, finely chopped
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

Wash and dry the baby potatoes thoroughly. Slice them in half to create flat surfaces for better caramelization.

Step 3

In a large bowl, combine the olive oil, salt, pepper, paprika, thyme, and rosemary. Toss the halved baby potatoes in this mixture until evenly coated.

Step 4

On the prepared baking sheet, spread the shredded parmesan cheese evenly into a thin layer. Place the seasoned potatoes cut-side down on top of the parmesan layer.

Step 5

Bake in the preheated oven for 35 to 40 minutes, or until the potatoes are golden brown and crispy and the parmesan has formed a crust.

Step 6

While the potatoes cook, melt the butter in a small saucepan over low heat. Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 7

Remove the potatoes from the oven and carefully use a spatula to lift them off the baking sheet, keeping the crispy parmesan layer intact.

Step 8

Transfer the potatoes to a serving dish and drizzle the garlic butter over them. Garnish with freshly chopped parsley if desired.

Step 9

Serve immediately and enjoy the delicious contrast of crispy, cheesy edges and creamy potato interiors.
