Ingredients

  • 1 cup unsalted butter
  • 0.5 cup granulated sugar
  • 2 cups all-purpose flour
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups boiling water
  • 0.5 package lime-flavored gelatin powder
  • 0.5 package berry blue-flavored gelatin powder
  • 0.5 package grape-flavored gelatin powder
  • 6 tbsp cold water

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan and line it with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Gradually mix in the all-purpose flour until a crumbly dough forms.

Step 3

Press the dough evenly into the bottom of the prepared baking pan to form the crust. Poke a few holes in the dough with a fork to prevent bubbling.

Step 4

Bake the crust in the preheated oven for 20 minutes or until lightly golden. Remove from the oven and let it cool completely.

Step 5

While the crust cools, prepare the cream cheese layer. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Step 6

In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

Step 7

Spread the cream cheese mixture evenly over the cooled crust. Smooth it with a spatula and refrigerate for 20-30 minutes to firm up.

Step 8

Prepare the colorful gelatin layers. In a small bowl, dissolve each gelatin flavor (lime, berry blue, and grape) in 2/3 cup boiling water. Stir until completely dissolved. Let them cool slightly to room temperature.

Step 9

Layer the gelatin over the cream cheese filling. Start with the lime gelatin, carefully pouring a thin, even layer on top. Refrigerate for 10 minutes to partially set.

Step 10

Repeat with the berry blue and grape gelatin layers, refrigerating each layer for 10 minutes before adding the next. This will create a stunning, colorful gradient.

Step 11

Once all the layers are set, refrigerate the bars for an additional 2 hours to fully chill and set.

Step 12

Cut into 12 bars and serve cold. Enjoy your Northern Light Bars as a dazzling dessert for any occasion!
