Ingredients

  • 500 g fresh green peas (or frozen)
  • 2 medium potatoes
  • 1 medium carrot
  • 1 medium onion
  • 2 garlic cloves
  • 1 l vegetable stock
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 2 tbsp fresh parsley
  • 1 tsp salt
  • 0.5 tsp pepper
  • 2 tbsp sour cream (optional, for serving)

Directions

Step 1

In a medium-sized pot, melt the butter over medium heat. Add the chopped onion and garlic and sauté until fragrant and translucent, about 3-4 minutes.

Step 2

Peel and dice the potatoes and carrot into small cubes. Add them to the pot and sauté for another 5 minutes.

Step 3

Sprinkle the flour over the vegetables, stirring continuously to coat evenly and cook for 1-2 minutes to remove the raw taste of the flour.

Step 4

Pour in the vegetable stock slowly while stirring to prevent lumps. Add the green peas, salt, and pepper, and bring the soup to a gentle boil.

Step 5

Reduce the heat to low and let the soup simmer for 20 minutes, or until the vegetables are tender.

Step 6

Using an immersion blender, purée the soup until smooth, or leave some texture if you prefer a chunkier consistency.

Step 7

Add the chopped fresh parsley to the soup and stir well. Taste and adjust the seasoning with more salt or pepper if needed.

Step 8

Serve the soup hot, optionally topped with a dollop of sour cream for extra creaminess. Pair it with crusty bread for a satisfying meal.
