Ingredients

  • 12 ounces egg noodles
  • 3 tablespoons butter
  • 1 large yellow onion
  • 2 medium garlic cloves
  • 16 ounces sauerkraut
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon ground caraway seeds
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded Swiss cheese
  • 0.5 cup breadcrumbs
  • 2 tablespoons fresh parsley (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.

Step 3

Melt the butter in a large skillet over medium heat. Dice the onion and mince the garlic, then add them to the skillet. Sauté for 5-7 minutes, or until translucent and fragrant.

Step 4

Drain the sauerkraut and add it to the skillet. Stir in the chicken broth and ground caraway seeds. Cook for 5 minutes to allow the flavors to meld.

Step 5

Remove the skillet from heat and stir in the sour cream, salt, and black pepper until the mixture is well combined.

Step 6

In a large bowl, combine the cooked egg noodles and the sauerkraut mixture. Toss until the noodles are fully coated.

Step 7

Transfer the noodle mixture to the prepared baking dish. Sprinkle the top evenly with shredded Swiss cheese and breadcrumbs.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.

Step 9

Remove from the oven and let cool for 5 minutes before serving. Garnish with chopped fresh parsley, if desired.
