Ingredients

  • 300 g noodles (your choice, such as egg noodles or rice noodles)
  • 250 g chicken breast or tofu
  • 1 large carrot, julienned
  • 1 large bell pepper, sliced
  • 150 g broccoli florets
  • 4 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp vegetable oil
  • 2 stalks green onions, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp crushed red chili flakes (optional)

Directions

Step 1

Bring a pot of water to a boil and cook the noodles according to the package instructions. Drain and set aside.

Step 2

If using chicken breast, slice it into thin strips. If using tofu, cut it into bite-sized cubes.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken or tofu and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.

Step 4

In the same pan, add the remaining 1 tablespoon of vegetable oil. Add minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant.
