Ingredients

  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Garlic powder
  • 1 cup Non-dairy sour cream
  • 4 ounces Non-dairy cream cheese
  • 1 tablespoon Lemon juice
  • 1 tablespoon Chopped fresh chives (optional)
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Peel and finely dice the yellow onion into small, even pieces.

Step 2

Heat a skillet over medium heat and add the olive oil.

Step 3

Add the diced onions and sprinkle with a pinch of salt. Cook, stirring occasionally, for 20-25 minutes, until the onions are golden brown and caramelized. Adjust the heat to low if they start to brown too quickly.

Step 4

Once caramelized, remove the onions from the heat and allow them to cool to room temperature.

Step 5

In a medium mixing bowl, combine the non-dairy sour cream, non-dairy cream cheese, lemon juice, garlic powder, black pepper, and the cooled caramelized onions.

Step 6

Mix well until all ingredients are smooth and evenly combined. Taste and adjust the seasoning with additional salt and pepper if needed.

Step 7

Transfer the dip to a serving bowl and garnish with fresh chopped chives, if desired.

Step 8

Serve immediately with chips, crackers, or veggie sticks, or refrigerate for at least 1 hour for the flavors to meld together.
