  • 3 tbsp Black vinegar (Chinkiang vinegar)
  • 2 tbsp Soy sauce
  • 1 tbsp Dark soy sauce
  • 2 tbsp Sugar
  • 20 g Ginger
  • 4 pcs Garlic cloves
  • 2 pcs Star anise
  • 2 tbsp Cooking oil
  • 1.5 cups Water
  • 2 pcs Scallions (for garnish)

Directions

Step 1

Cut the pork belly into bite-sized cubes and set aside. Peel and slice the ginger into thin pieces. Peel and finely chop the garlic.

Step 2

Heat the cooking oil in a large, heavy-bottomed skillet or wok over medium heat. Add the ginger slices and star anise, frying until fragrant, about 1-2 minutes.

Add the pork belly pieces to the pan and cook until they are browned on all sides, about 8-10 minutes.
