Ingredients

  • 500 grams Ready-made shortcrust pastry
  • 300 grams Dried mixed fruit (raisins, sultanas, currants)
  • 1 large Grated apple (peeled, cored)
  • 75 grams Chopped dried apricots
  • 50 grams Chopped mixed nuts (almonds, walnuts, hazelnuts)
  • 75 grams Brown sugar
  • 1 teaspoon Cinnamon powder
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Allspice
  • 1 large Lemon (juice and zest)
  • 1 large Orange (juice and zest)
  • 50 grams Vegetable suet or coconut oil
  • 2 tablespoons Brandy (optional)
  • 2 tablespoons Icing sugar (for dusting)

Directions

Step 1

Preheat your oven to 200°C (180°C fan) or 400°F and grease a 12-hole muffin tin.

Step 2

To make the filling, combine the dried mixed fruit, grated apple, chopped apricots, chopped nuts, brown sugar, cinnamon, nutmeg, and allspice in a large mixing bowl.

Step 3

Add the lemon juice, lemon zest, orange juice, orange zest, and vegetable suet (or coconut oil) to the bowl. Stir thoroughly to combine. If using brandy, mix it in as well for added depth of flavor.

Step 4

Unroll the shortcrust pastry onto a floured surface. Using a 10cm (4-inch) round cutter, cut out 12 circles and press each one gently into the greased muffin tin to form the pie bases.

Spoon approximately 1-2 tablespoons of the fruit mixture into each pie base, being careful not to overfill.

Using a smaller round cutter (approximately 7.5cm or 3 inches), cut out 12 pastry lids. Place one on top of each pie and press the edges to seal. Use a knife to make a small slit or two in the center of each pie lid to allow steam to escape.

Bake the mince pies in the preheated oven for 20-25 minutes, or until the pastry is golden and cooked through.

Remove from the oven and let the pies cool in the tin for 10 minutes before transferring them to a wire rack.
