Ingredients

  • 2 cups Granulated sugar
  • 1 cup Light corn syrup
  • 1 2/3 cup Water
  • 2 large Egg whites
  • 1 teaspoon Vanilla extract
  • 1 cup Chopped pecans or walnuts (optional)
  • 1 pinch Pinch of salt

Directions

Step 1

Line a baking sheet with wax paper or parchment paper. Set aside.

Step 2

In a medium saucepan, combine granulated sugar, light corn syrup, water, and a pinch of salt. Stir gently to combine.

Step 3

Place the saucepan over medium heat. Stir constantly until the sugar dissolves, then stop stirring.

Step 4

Attach a candy thermometer to the side of the saucepan and continue cooking the syrup without stirring until it reaches 250°F (hard-ball stage). This may take 8–10 minutes.

Step 5

While the syrup is cooking, place the egg whites in a clean, grease-free mixing bowl. Using a stand mixer or hand mixer, beat the egg whites on high speed until stiff peaks form (3–4 minutes).

Step 6

Once the syrup reaches 250°F, immediately and carefully remove it from the heat. With the mixer running on high speed, pour the hot syrup in a thin, steady stream into the beaten egg whites.

Step 7

Continue beating the mixture on high speed until it becomes thick, glossy, and holds its shape (about 5–8 minutes).

Step 8

Add the vanilla extract and chopped nuts (if using) to the mixture. Beat just until combined.

Step 9

Using two spoons, quickly drop spoonfuls of the mixture onto the prepared baking sheet to form individual candies. Work quickly, as the mixture will begin to set.

Step 10

Allow the divinity to cool and set completely at room temperature (1–2 hours).

Step 11

Once set, carefully remove the candies from the wax paper. Store in an airtight container at room temperature for up to two weeks.
