Ingredients

  • 1 lb Ground beef or turkey
  • 1 medium Yellow onion, diced
  • 15 oz Canned diced tomatoes
  • 15 oz Canned black beans, rinsed and drained
  • 15 oz Canned kidney beans, rinsed and drained
  • 15 oz Canned corn, drained
  • 8 oz Tomato sauce
  • 2 cups Low-sodium chicken or beef broth
  • 1 packet Taco seasoning
  • 1 packet Ranch dressing mix
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0 Optional toppings: shredded cheese, sour cream, diced avocado, tortilla chips, chopped cilantro

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Step 2

Add the diced onion and cook for 2-3 minutes until softened.

Step 3

Add the ground beef or turkey to the pot and break it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess grease if necessary.
