Ingredients

  • 300 grams Cremini mushrooms
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 small Shallots
  • 2 large Garlic cloves
  • 120 milliliters Dry white wine
  • 180 milliliters Heavy cream
  • 2 sprigs Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 30 grams Parmesan cheese (optional)

Directions

Step 1

Clean the mushrooms with a damp paper towel and slice them thinly. Finely dice the shallots and mince the garlic cloves.

Step 2

In a large skillet over medium heat, melt the butter with the olive oil. Once hot, add the shallots and sauté for 2-3 minutes until translucent.

Step 3

Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Step 4

Increase the heat to medium-high and add the sliced mushrooms. Sauté for 6-8 minutes until the mushrooms are golden brown and any released moisture has evaporated.

Step 5

Pour in the white wine and scrape the bottom of the skillet to deglaze, incorporating any browned bits. Let the wine reduce by half, which will take about 3-4 minutes.

Step 6

Lower the heat to medium and stir in the heavy cream and thyme sprigs. Allow the sauce to simmer gently for 5-7 minutes, stirring occasionally, until it thickens slightly.

Step 7

Season the sauce with salt and black pepper to taste. If desired, stir in grated Parmesan cheese for extra richness.

Step 8

Remove the thyme sprigs before serving. The sauce pairs beautifully with pasta, grilled steak, or roasted vegetables.
