  • 1 small head, quartered cabbage

  • 2 stalks, chopped for garnish spring onions

Directions

Step 1

Start by preparing the pork belly: rinse it under cold water, and cut into 2-inch cubes.

In a large pot, combine the pork belly pieces and 10 cups of water. Bring to a boil over medium-high heat.

Once boiling, reduce to medium heat. Skim off any foam or scum that rises to the top of the pot using a spoon.

Add the quartered onion, whole peppercorns, and fish sauce. Stir gently.
