Ingredients

  • 250 grams All-purpose flour
  • 1 teaspoon Instant yeast
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Baking powder
  • 120 milliliters Warm water (around 40°C/104°F)
  • 1 tablespoon Vegetable oil
  • 200 grams Ground pork
  • 2 stalks Green onions, finely chopped
  • 1 teaspoon Ginger, grated
  • 1 tablespoon Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a mixing bowl, combine the all-purpose flour, instant yeast, sugar, and baking powder.

Step 2

Gradually add warm water and vegetable oil to the dry ingredients, mixing until a sticky dough forms.

Step 3

Transfer the dough to a lightly floured surface and knead for about 8–10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Step 5

While the dough is rising, prepare the pork filling. In a bowl, combine the ground pork, chopped green onions, grated ginger, soy sauce, oyster sauce, sesame oil, cornstarch, salt, and black pepper. Mix well until all ingredients are incorporated.

Step 6

Divide the risen dough into 6 equal portions. Roll each portion into a ball and then flatten it into a round disk about 4 inches (10 cm) in diameter.

Step 7

Place about 1 tablespoon of the pork filling in the center of each dough disk. Carefully fold the edges over the filling, pleating as you go, and pinch the top to seal the bun.

Step 8

Place each bun on a small piece of parchment paper. Cover the buns with a damp cloth and let them rest for 15 minutes.

Step 9

Prepare a steamer and bring water to a gentle boil. Arrange the buns in the steamer, ensuring enough space between them to allow for expansion.

Step 10

Steam the buns for 12–15 minutes, making sure not to lift the lid during cooking to prevent the buns from collapsing.

Step 11

Carefully remove the buns from the steamer and serve warm. Enjoy your homemade Nikuman (Butaman) Pork Buns!
