Ingredients

  • 2 cups Sushi rice
  • 2.5 cups Water
  • 1 cup Rice vinegar
  • 2 tablespoons Sugar
  • 1 tablespoon Salt
  • 0.75 pound Fresh tuna or salmon
  • 2 teaspoons Wasabi paste
  • 0.25 cup Soy sauce

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Combine rinsed rice and 2.5 cups of water in a rice cooker. Cook according to the rice cooker's instructions.

Step 3

While the rice is cooking, prepare the sushi vinegar by combining rice vinegar, sugar, and salt in a small saucepan over low heat. Stir until sugar and salt are dissolved. Do not boil. Let it cool to room temperature.

Step 4

Once the rice is cooked, transfer it to a large wooden or glass bowl. Gradually add the sushi vinegar to the rice, cutting and folding the rice gently with a spatula to evenly distribute the vinegar without mashing the grains.

Cover the rice with a damp cloth and let it cool to room temperature.

Slice the fish into thin pieces approximately 2 inches long and 3/4 inch wide. The slices should be about 1/4 inch thick.
