Ingredients

  • 2 cups black-eyed peas
  • 1 medium onion
  • 1 small bell pepper
  • 1 scotch bonnet pepper
  • 1 teaspoon salt
  • 1 cup water
  • 2 cups vegetable oil

Directions

Step 1

Start by soaking the black-eyed peas in water for at least 1 hour to aid in easier removal of the skins.

Drain the peas and rub them between your palms to remove the skins. Rinse until most of the skins are washed away.

In a blender, combine skinned beans with the onion, bell pepper, scotch bonnet pepper, and 1 cup of water. Blend until you achieve a smooth, thick paste.

Transfer the blended mixture to a mixing bowl, add salt, and stir well to combine.

In a deep pan, heat vegetable oil over medium-high heat to about 350°F (175°C).
