  • 200 grams Cheddar cheese, shredded

  • 150 grams Cooked chicken, shredded (optional)
  • 1 tablespoon Olive oil
  • 100 grams Sour cream (for serving)
  • 100 grams Salsa (for serving)

Directions

Step 1

Place two of the flour tortillas on a clean surface.

Step 2

Sprinkle half the shredded cheddar cheese evenly over the tortillas, leaving about 1 cm around the edge.

Step 3

Scatter the sliced scallions evenly on top of the cheese. If using jalapeño or shredded chicken, add those as well.

Step 4

Top with the remaining cheddar cheese to create an even layer of filling.

Cover each tortilla with another tortilla to form a sandwich.

Heat a large non-stick skillet over medium heat and add the olive oil, swirling to coat the pan.
