Ingredients

  • 375 grams Unsalted butter
  • 375 grams Dark chocolate (minimum 70% cocoa solids)
  • 6 units Large eggs
  • 500 grams Caster sugar
  • 1 tablespoon Vanilla extract
  • 225 grams Plain flour
  • 1 teaspoon Salt
  • 100 grams Chopped walnuts (optional)

Directions

Step 1

Preheat the oven to 180°C (350°F) and line your brownie pan (approximately 33cm x 23cm) with parchment paper.

Step 2

Melt the butter and dark chocolate together in a large saucepan over low heat, stirring occasionally to combine. Once melted, remove the pan from the heat and let it cool slightly.

Step 3

In a large bowl, whisk the eggs together with the caster sugar and vanilla extract until combined and slightly frothy.

Step 4

Slowly pour the cooled chocolate mixture into the egg mixture, stirring continuously to prevent the eggs from curdling.

Step 5

In a separate bowl, sift together the plain flour and salt. Gently fold this dry mixture into the chocolate and egg mixture using a spatula or wooden spoon until just combined.

Step 6

If using, fold in the chopped walnuts to evenly distribute them throughout the batter.

Step 7

Pour the brownie batter into the prepared pan, spreading it evenly with the spatula.

Step 8

Bake in the preheated oven for 25 minutes. The top should look set and slightly cracked, but the middle should remain gooey for a fudgy texture.

Step 9

Remove the brownies from the oven and let them cool completely in the pan before cutting into squares or rectangles for serving.
