  • 8 cups Chicken or turkey broth
  • 1 teaspoon, chopped Fresh thyme
  • 2 tablespoons, chopped Fresh parsley
  • 2 Bay leaves
  • 1 teaspoon, adjust to taste Salt
  • 0.5 teaspoon, adjust to taste Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

1. If using the turkey carcass, place it in a large stockpot. Add enough water to cover the carcass, about 10-12 cups, and bring to a boil. Reduce heat to a simmer and cook for 45-60 minutes. Skim off any foam or impurities that rise to the surface.

2. Strain the broth into a bowl or another pot, discarding the carcass and any solids. Measure out 8 cups of the broth for the soup. If you don't have enough, supplement with chicken or store-bought turkey broth.
