Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Butter
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 1 cup Heavy cream
  • 2 cups Cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 2 teaspoons Cajun seasoning
  • 3 stalks Green onions
  • 0.5 cup Breadcrumbs
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick cooking spray.

Step 2

Peel the russet potatoes and cut them into 1/4-inch thick slices. Place the slices in a large pot of salted water and bring to a boil. Cook for 8-10 minutes or until the potatoes are just tender. Drain and set aside.

While the potatoes cook, finely chop the yellow onion and mince the garlic. Slice the green onions into thin rounds and set aside for garnish.
