Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 0.75 cups unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cups packed brown sugar
  • 2 units large eggs
  • 1 teaspoons pure vanilla extract
  • 1 cup buttermilk
  • 0.5 cups raisins (optional)
  • 0.5 cups chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and ground cloves. Set aside.

Step 3

In a large bowl, using a hand mixer or stand mixer, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

Step 4

Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next. Mix in the vanilla extract.

Step 5

With the mixer on low, alternate adding the dry ingredients and the buttermilk to the butter mixture. Begin with 1/3 of the dry ingredients, mix just until incorporated, then add 1/2 of the buttermilk. Repeat, ending with the dry ingredients.

Step 6

If using raisins and/or chopped walnuts, fold them gently into the batter with a spatula.

Step 7

Pour the batter into the prepared baking pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Optional: Dust the cooled cake with powdered sugar or frost with cream cheese icing for added sweetness.
