Ingredients

  • 2 lbs Yukon Gold potatoes
  • 6 tbsp Unsalted butter
  • 0.5 cup Heavy cream
  • 2 large Garlic cloves
  • 1 sprig Fresh rosemary
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 stalks Green onions (optional, for garnish)

Directions

Step 1

Peel and chop the Yukon Gold potatoes into evenly sized chunks, about 2 inches wide, to ensure even cooking.

Step 2

Fill a large pot with water and add 1 teaspoon of salt. Place the potato chunks into the pot and bring to a boil over medium-high heat.

Step 3

Once the water reaches a boil, reduce the heat to medium and let the potatoes cook for 15-20 minutes, or until they can be easily pierced with a fork.

Step 4

While the potatoes are boiling, peel the garlic cloves and slice them thinly. In a small saucepan, melt 2 tablespoons of unsalted butter over low heat, then add the sliced garlic and the rosemary sprig.

Step 5

Cook the garlic and rosemary in the butter for 2-3 minutes, or until the garlic is fragrant and lightly golden. Remove from heat and discard the rosemary sprig.

Step 6

Drain the cooked potatoes and return them to the pot. Allow them to sit for 1-2 minutes over low heat to evaporate any excess moisture.

Step 7

Using a potato masher or ricer, mash the potatoes until smooth, or to your desired texture.

Step 8

In the pot with the mashed potatoes, stir in the remaining 4 tablespoons of unsalted butter, the garlic-infused butter, and the heavy cream. Mix until the potatoes are creamy and fully combined.

Step 9

Season the mashed potatoes with ground black pepper and more salt to taste, if needed.

Step 10

For garnish, finely chop green onions and sprinkle on top of the mashed potatoes before serving, if desired.

Step 11

Serve warm and enjoy as a comforting side dish!
