Ingredients

  • 4 pieces large eggs
  • 2 tablespoons whole milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons green chiles (canned, diced)
  • 0.25 cup black beans (cooked and rinsed)
  • 0.25 cup shredded cheddar cheese
  • 2 slices cooked bacon (crumbled)
  • 2 tablespoons salsa
  • 1 tablespoon cilantro (optional, chopped)

Directions

Step 1

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well blended and fluffy.

Step 2

Heat a non-stick skillet over medium heat. Add the olive oil and butter, allowing the butter to melt and coat the pan evenly.

Step 3

Pour the egg mixture into the skillet and let it cook undisturbed for about 1-2 minutes or until the edges start to set.

Step 4

Using a spatula, gently lift the edges of the omelet and tilt the skillet to allow any uncooked egg mixture to flow to the edges.

Step 5

Evenly sprinkle the green chiles, black beans, shredded cheddar cheese, and crumbled bacon over one half of the omelet.

Step 6

Carefully fold the other half of the omelet over the filling using the spatula. Cook for another 1-2 minutes to melt the cheese and heat the filling through.

Step 7

Slide the omelet onto a plate and top with salsa. Garnish with chopped cilantro if desired.

Step 8

Serve immediately and enjoy this flavorful southwestern-inspired omelet.
