Ingredients

  • 500 grams cooked jasmine rice
  • 2 tablespoons cooking oil
  • 3 medium shallots
  • 3 cloves garlic cloves
  • 3 pieces red bird's eye chili
  • 50 grams anchovies
  • 2 large eggs
  • 2 tablespoons kecap manis (sweet soy sauce)
  • 1 teaspoon salt
  • 0.5 teaspoon ground white pepper
  • 100 grams sliced cucumber
  • 1 medium tomato wedges
  • 2 tablespoons fried shallots
  • 1 stalk spring onion

Directions

Step 1

Prepare the ingredients by thinly slicing the shallots and garlic, and roughly chopping the red bird's eye chili.

In a large wok or frying pan, heat the cooking oil over medium heat.

Add the anchovies and fry until they are golden brown and crispy, then remove and set aside.
