Ingredients

  • 1 cup Unsalted butter
  • 0.5 cup Granulated sugar
  • 5 tablespoons Cocoa powder
  • 1 whole Large egg
  • 2 cups Graham cracker crumbs
  • 1 cup Shredded sweetened coconut
  • 2 cups Powdered sugar
  • 0.5 cup Unsalted butter (softened)
  • 3 tablespoons Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 cup Semi-sweet chocolate chips
  • 2 tablespoons Unsalted butter

Directions

Step 1

Line an 8x8-inch square baking dish with parchment paper, ensuring the edges hang over for easy removal later.

Step 2

In a medium saucepan over low heat, melt 1 cup of unsalted butter. Stir in 1/2 cup granulated sugar and 5 tablespoons of cocoa powder until smooth.

Step 3

Remove the pan from heat. Quickly whisk in the egg, ensuring it fully incorporates to create a glossy mixture.

Step 4

Stir in 2 cups of graham cracker crumbs and 1 cup of shredded sweetened coconut. Mix until well combined.

Step 5

Press the mixture firmly and evenly into the prepared baking dish to form the base layer. Chill in the refrigerator for 15 minutes while preparing the filling.

Step 6

In a mixing bowl, beat 1/2 cup softened butter until creamy. Gradually add 2 cups powdered sugar, alternating with 3 tablespoons heavy cream, to create a smooth filling.

Step 7

Add 1 teaspoon vanilla extract and mix until incorporated. Spread the filling evenly over the chilled base layer. Return to the refrigerator for another 15 minutes.

Step 8

In a heatproof bowl, melt 1 cup semi-sweet chocolate chips with 2 tablespoons butter over a double boiler or in the microwave. Stir until smooth.

Step 9

Pour the melted chocolate over the filling layer and spread evenly using an offset spatula.

Step 10

Chill the dessert in the refrigerator for at least 2 hours or until fully set.

Step 11

Once chilled, lift the dessert out of the baking dish using the parchment paper edges. Slice into 16 squares with a sharp knife and serve.
