Ingredients

  • 1 pound Ground turkey
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Taco seasoning
  • 1 15-ounce can Black beans, rinsed and drained
  • 1 cup Corn kernels, drained (canned or frozen)
  • 1 10-ounce can Diced tomatoes with green chilies
  • 1 cup Sour cream
  • 2 cups Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 6 cups Tortilla chips
  • 0.25 cup Cilantro, chopped (optional, for garnish)
  • 0.25 cup Green onions, sliced (optional, for garnish)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray and set aside.

Step 2

Place a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.

Step 3

Add the diced onion and minced garlic to the skillet. Cook for an additional 3 minutes, until the onion is softened.

Step 4

Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, salt, and pepper. Cook for another 2-3 minutes until heated through, then remove from heat.

Step 5

Spread 3 cups of tortilla chips evenly over the bottom of the greased baking dish as the first layer.

Step 6

Spoon half of the turkey mixture over the tortilla chips, followed by half of the sour cream, cheddar cheese, and Monterey Jack cheese.

Step 7

Repeat the layers with the remaining tortilla chips, turkey mixture, sour cream, cheddar cheese, and Monterey Jack cheese.

Step 8

Place the baking dish in the preheated oven and bake uncovered for 20-25 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden.

Step 9

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with chopped cilantro and sliced green onions, if desired.

Step 10

Serve immediately with extra tortilla chips, salsa, or guacamole on the side, and enjoy!
