Ingredients

  • 8 pieces sausages
  • 150 grams all-purpose flour
  • 3 large eggs
  • 200 ml milk
  • 2 tablespoons vegetable oil
  • 150 grams cheddar cheese
  • 2 pieces jalapeños
  • 2 pieces tomatoes
  • 1 small red onion
  • 1 tablespoon taco seasoning
  • 100 ml sour cream
  • 50 grams tortilla chips
  • 1 teaspoon hot sauce
  • 10 grams coriander (cilantro)

Directions

Step 1

Preheat your oven to 220°C (425°F) and place a roasting pan or ovenproof dish in the oven to heat up.

Step 2

In a large mixing bowl, whisk together the flour, eggs, milk, and taco seasoning until you have a smooth and lump-free Yorkshire pudding batter. Let it rest for 10 minutes.

Step 3

Meanwhile, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Brown the sausages for 5 minutes until golden but not fully cooked. Set aside.

Step 4

Carefully remove the hot roasting pan from the oven and add the remaining 1 tablespoon of vegetable oil. Arrange the sausages in the pan, making sure they are evenly spaced.

Step 5

Pour the Yorkshire pudding batter into the pan, allowing it to surround the sausages. Quickly return the pan to the oven and bake for 25-30 minutes or until the batter is puffed and golden.

Step 6

While the Toad in the Hole is baking, prepare the nacho toppings. Dice the tomatoes, finely chop the red onion, slice the jalapeños, and grate the cheddar cheese.

Step 7

Once the Yorkshire pudding has puffed, sprinkle the cheddar cheese evenly over the top and bake for another 5 minutes until the cheese melts.

Step 8

Remove the pan from the oven and top the dish with the diced tomatoes, chopped red onion, sliced jalapeños, crushed tortilla chips, and a drizzle of hot sauce.

Step 9

Finish by adding dollops of sour cream and sprinkling fresh coriander leaves over the top for garnish.

Step 10

Serve immediately, slicing into portions and enjoying the fusion of crispy Yorkshire pudding and spicy nacho flavors.
