Ingredients

  • 3 pieces Chicken breasts (boneless, skinless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 cups Cooked white or brown rice
  • 3 cups Tortilla chips
  • 1 cup Sour cream
  • 1 can Diced tomatoes with green chilies (canned)
  • 2 cups Cheddar cheese (shredded)
  • 2 tablespoons Cilantro (chopped, optional)
  • 2 pieces Green onions (chopped, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray.

Step 2

Season the chicken breasts with salt, black pepper, and garlic powder.

Step 3

Boil the chicken breasts in a pot of water until fully cooked, approximately 10-12 minutes. Remove from pot, shred the chicken with two forks, and set aside.

Spread the cooked rice evenly in the bottom of the prepared baking dish.

Layer the shredded chicken over the rice.

In a medium mixing bowl, mix the sour cream, canned diced tomatoes with green chilies (including their juice), and 1 cup of the shredded cheddar cheese. Stir until well combined.
