Indulge in the rich, melt-in-your-mouth decadence of Mysore Pak, a classic South Indian sweet steeped in tradition and flavor. Made with just five simple ingredients—gram flour (besan), ghee, sugar, water, and a pinch of aromatic cardamom—this golden treat boasts a crumbly, fudge-like texture that's synonymous with festive celebrations and joyful moments. The key to perfecting Mysore Pak lies in achieving the ideal sugar syrup consistency and expertly blending it with roasted gram flour and fragrant ghee, a process that results in its signature, velvety finish. Garnished with sliced almonds or pistachios for added crunch, this indulgent dessert is surprisingly easy to make and perfect for gifting or savoring during festivals. Whether you're planning a Diwali feast or simply craving a traditional Indian dessert, Mysore Pak offers timeless sweetness and unmatched flavor in every bite.
Start by preparing a tray or a baking dish by greasing it with a little ghee and keep it aside.
In a heavy-bottomed pan, dry roast the gram flour on low flame until it turns aromatic but not browned. This should take about 5-7 minutes. Set aside.
In a separate pan, add the sugar and water. Heat over medium flame while stirring until the sugar dissolves completely to form a sugar syrup.
Continue to boil the sugar syrup until it reaches a one-string consistency. Check this by taking a drop between your thumb and forefinger; when it forms a single string, it is ready.
Reduce the heat to low and gradually add the roasted gram flour to the sugar syrup, stirring continuously to avoid lumps.
In another small pan, melt the ghee. Gradually add this hot ghee into the gram flour and sugar mixture, a little at a time, stirring continuously.
After each addition of ghee, continue to cook and stir until the ghee is fully absorbed and the mixture begins to leave the sides of the pan.
Add the cardamom powder and mix well.
Quickly pour the mixture into the prepared greased tray and spread evenly. Use a spatula to smoothen the top.
If using almonds or pistachios, sprinkle them over the top for garnish while the mixture is still hot.
Allow the Mysore Pak to cool for about 10 minutes. When it is still slightly warm, cut it into squares or diamond shapes.
Let it cool completely before serving or storing.
