Ingredients

  • 4 cups Dosa batter
  • 3 medium Potatoes
  • 1 medium Onion
  • 2 Green chili
  • 1 inch piece Ginger
  • 1 teaspoon Mustard seeds
  • 10 Curry leaves
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 3 tablespoons Oil
  • 2 tablespoons Coriander leaves
  • 4 Red chilies
  • 2 tablespoons Urad dal
  • 1 tablespoon Chana dal
  • 0.25 cup Fresh coconut
  • 1 teaspoon Jaggery
  • 1 tablespoon Tamarind pulp
  • 0.5 cup Water

Directions

Step 1

Boil, peel, and mash the potatoes. Set aside.

Step 2

Finely chop the onion, green chili, and ginger.

Step 3

Heat 1 tablespoon oil in a pan. Add mustard seeds, wait for them to splutter, then add curry leaves and green chili.

Add chopped onion and ginger. Sauté until the onion is translucent.

Step 5

Mix in turmeric powder, salt, and mashed potatoes. Stir well to combine. Cook for 5 minutes.

Add chopped coriander leaves, mix, and set filling aside.

For the chutney, heat 1 tablespoon oil in a pan. Add urad dal and chana dal, sauté until golden brown.

Add red chilies, coconut, jaggery, and sauté for 2 minutes.
