Ingredients

  • 4 Large flour tortillas
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 cup Cooked chicken, shredded (optional)
  • 1 Bell pepper, diced (any color)
  • 0.5 Red onion, finely chopped
  • 1 Jalapeño, thinly sliced (optional)
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Butter
  • 0.5 cup Sour cream (for serving, optional)
  • 0.5 cup Salsa (for serving, optional)

Directions

Step 1

Preheat a large skillet or griddle over medium heat.

Step 2

In a small bowl, combine the cheddar cheese and Monterey Jack cheese for an even cheese mixture.

Step 3

Lay out the tortillas on a clean surface, and evenly distribute the cheese mixture onto half of each tortilla.

Step 4

If using cooked chicken, sprinkle it over the cheese. Then add diced bell peppers, chopped red onion, jalapeño slices (if using), and cilantro.

Step 5

Fold the empty half of each tortilla over the filling to create a semi-circle.

Step 6

Melt 1 tablespoon of butter in the skillet. Place two quesadillas in the skillet at a time, cooking for 3-4 minutes per side or until the tortillas are golden brown and the cheese is melted. Adjust heat as needed to prevent burning.

Step 7

Repeat the process with the remaining butter and quesadillas.

Step 8

Remove the quesadillas from the skillet and let them cool for 1-2 minutes before slicing into wedges.

Step 9

Serve warm with sour cream and salsa on the side, if desired.
