Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced
  • 2 medium celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 6 cups chicken broth
  • 1 large russet potato, peeled and diced
  • 2 cups kale, stems removed and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, sliced carrots, and celery to the pot. Sauté for 4-5 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, stirring constantly to prevent burning.

Step 4

Add the diced chicken breast to the pot and cook until the chicken is no longer pink on the outside, about 5 minutes.

Step 5

Pour in the chicken broth and add the diced potato, dried thyme, dried oregano, bay leaf, salt, and black pepper. Stir to combine.

Step 6

Bring the soup to a boil over high heat, then reduce the heat to low and simmer for 20 minutes, or until the potatoes are tender.

Step 7

Stir in the chopped kale and let it cook for 5 more minutes, until wilted and tender.

Step 8

Taste and adjust seasoning as needed. For a bright flavor, stir in a tablespoon of lemon juice, if desired.

Step 9

Remove the bay leaf before serving, and ladle the soup into bowls. Enjoy warm!
