Ingredients

  • 4 slices Rye bread
  • 8 ounces Thinly sliced corned beef
  • 4 slices Swiss cheese
  • 1 cup Sauerkraut
  • 4 tablespoons Unsalted butter
  • 0.5 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 1 tablespoon Dill pickle relish
  • 1 teaspoon Prepared horseradish
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Prepare the Russian dressing by combining the mayonnaise, ketchup, dill pickle relish, prepared horseradish, paprika, salt, and ground black pepper in a small bowl. Mix well and set aside.

Step 2

Heat a skillet or griddle over medium heat.

Step 3

Butter one side of each slice of rye bread using 1 tablespoon of butter per slice.

Step 4

Place two slices of the buttered rye bread, buttered side down, onto the skillet.

Step 5

Spread a generous layer of the Russian dressing on the upward-facing side of the bread in the skillet.

Step 6

Layer 4 ounces of corned beef, 2 slices of Swiss cheese, and 1/2 cup of sauerkraut on each slice of bread in the skillet.

Step 7

Spread the Russian dressing on the unbuttered side of the remaining slices of bread, then place them on top of each sandwich with the buttered side facing up.

Step 8

Cook the sandwiches for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Step 9

Remove the sandwiches from the skillet and let them rest for 1-2 minutes before slicing in half and serving.
