Ingredients

  • 4 pieces cube steak
  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 large egg
  • 1.5 cups whole milk
  • 0.5 cups vegetable oil
  • 2 tablespoons butter
  • 2 cups chicken broth
  • 1 cup heavy cream

Directions

Step 1

Season the cube steaks on both sides with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Set aside.

Step 2

In a shallow dish, combine the flour, remaining 1 teaspoon of salt, remaining 1/2 teaspoon of black pepper, paprika, and garlic powder. Mix well.

Step 3

In a separate shallow dish, whisk together the eggs and 1 cup of the whole milk.

Step 4

Dredge each steak in the seasoned flour, then dip it into the egg and milk mixture, and coat it once again in the seasoned flour. Shake off any excess and set aside on a plate.

Step 5

Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot but not smoking, carefully place the breaded steaks into the pan, working in batches if necessary.

Step 6

Cook the steaks for 3–4 minutes per side, or until golden brown and cooked through. Transfer the cooked steaks to a paper towel-lined plate to drain excess oil.

Step 7

Discard most of the oil from the skillet, leaving about 2 tablespoons along with the browned bits on the bottom of the pan. Reduce the heat to medium-low.

Step 8

Add the butter to the skillet and let it melt. Sprinkle 3 tablespoons of the remaining seasoned flour into the pan and whisk continuously for 1–2 minutes to form a roux.

Step 9

Slowly whisk in the chicken broth and remaining 1/2 cup of milk, making sure there are no lumps. Bring the mixture to a gentle simmer.

Step 10

Stir in the heavy cream and cook the gravy for 3–4 minutes, or until it thickens to your desired consistency. Taste and adjust seasonings, if necessary.

Step 11

Serve the chicken fried steaks hot, smothered with the cream gravy. Enjoy with your favorite sides, such as mashed potatoes or green beans.
