Directions

Step 1

Take the steaks out of the refrigerator and let them come to room temperature for about 30 minutes before cooking. This ensures even cooking.

Generously season both sides of the steaks with salt and freshly cracked black pepper.

Heat a heavy skillet, such as cast iron, over medium-high heat until very hot. Add the olive oil and swirl to coat the pan.
