Directions

Step 1

Preheat your oven to 450°F (230°C) or prepare a grill to medium-high heat.

Pierce the eggplants several times with a fork to allow steam to escape while cooking.

Place the eggplants directly on the oven rack (or grill) and roast for 25-30 minutes, turning occasionally, until the skin is charred and the flesh is soft.
