Ingredients

  • 2 pounds Gold potatoes
  • 1 tablespoon Salt
  • 0.5 cup Mayonnaise

  • 1 teaspoon Honey
  • 2 pieces Celery stalks, finely diced
  • 0.5 cup Red onion, finely chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped (optional)
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash and peel the potatoes, then cut them into bite-sized chunks. Place the potatoes in a large pot and cover with cold, salted water. Bring to a boil over medium-high heat and cook for about 10-15 minutes, or until the potatoes are fork-tender.

Drain the potatoes and let them cool for 10 minutes. Transfer to a large mixing bowl.
