Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 0.5 cup Mayonnaise
  • 3 tablespoons Dijon mustard
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Celery seeds
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves of the green cabbage and cut it into quarters. Remove the core and finely shred the cabbage using a knife, mandoline, or food processor. Place the shredded cabbage in a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or food processor. Add the shredded carrots to the bowl with the cabbage.

Step 3

In a separate smaller bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey, celery seeds, salt, and black pepper until smooth and well combined.

Step 4

Pour the dressing over the shredded cabbage and carrots. Using tongs or a large spoon, toss the vegetables thoroughly to coat them evenly in the dressing.

Step 5

Taste the cole slaw and adjust the seasoning with additional salt, pepper, or a splash more vinegar if needed.

Step 6

Cover the bowl and refrigerate the cole slaw for at least 1 hour to allow the flavors to meld.

Step 7

Give the cole slaw one final toss before serving. Serve chilled as a side dish or topping.
