  • 4 pieces bone-in, skin-on chicken thighs

  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Pat the chicken thighs dry with a paper towel and season both sides with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for 5-6 minutes until golden and crispy, then flip and cook the other side for an additional 3-4 minutes. Remove the chicken from the skillet and set aside.
