Ingredients

  • 1 kg Fresh mussels
  • 3 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 Yellow onion, finely chopped
  • 125 ml Dry white wine
  • 400 g Canned crushed tomatoes
  • 1 tbsp Tomato paste
  • 0.5 tsp Red chili flakes
  • 2 tbsp Fresh parsley, chopped
  • 100 g Feta cheese, crumbled
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 4 Lemon wedges (for serving)

Directions

Step 1

Clean the mussels under cold running water, scrubbing the shells and discarding any that are open and do not close when tapped. Set aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, and sauté until the onion becomes soft and translucent, about 5 minutes.

Step 3

Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly.

Step 4

Add the crushed tomatoes, tomato paste, red chili flakes, dried oregano, salt, and black pepper. Stir well to combine and let the sauce simmer for 10 minutes to develop the flavors.

Gently place the cleaned mussels into the skillet with the sauce. Cover with a lid and cook for 4-6 minutes, shaking the skillet occasionally, until the mussels open. Discard any mussels that remain closed after cooking.

Sprinkle the crumbled feta cheese and chopped parsley over the top of the mussels. Allow it to cook uncovered for an additional 2 minutes, letting the feta partially melt into the sauce.
