Ingredients

  • 2 pounds Fresh mussels
  • 3 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 2 medium Shallots, finely chopped
  • 1 pint Cherry tomatoes, halved
  • 1 cup Dry white wine
  • 0.5 cup Chicken or fish stock
  • 3 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 1 whole Bay leaf
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 loaf Crusty bread (for serving)

Directions

Step 1

Rinse the mussels thoroughly under cold running water and remove any visible debris or beards. Discard any mussels that are cracked or don’t close when tapped.

Step 2

Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.

Step 3

Add the minced garlic and shallots to the pan and sauté until fragrant and translucent, about 2-3 minutes.

Step 4

Stir in the halved cherry tomatoes and cook for 4-5 minutes until they start to soften and release their juices.

Step 5

Pour in the white wine and chicken or fish stock. Add the thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer.

Step 6

Once the liquid is simmering, add the mussels to the pot and stir gently to coat them in the sauce.

Step 7

Cover the pot with a lid and allow the mussels to steam for 5-6 minutes, or until they have opened. Discard any mussels that remain closed after cooking.

Step 8

Sprinkle the chopped parsley over the mussels and give them a final stir.

Step 9

Serve immediately in bowls with the sauce ladled over the mussels and warm crusty bread on the side for dipping.
