Directions

Step 1

Clean the mussels thoroughly under cold water, scrubbing away any dirt or barnacles. Remove the beards (the fibrous threads sticking out of the shells). Discard any mussels that are cracked, broken, or do not close when tapped.

In a large, wide pot or Dutch oven, heat the olive oil and butter over medium heat until the butter is melted and sizzling.
