Ingredients

  • 12 pieces Large button mushrooms
  • 4 cups Fresh spinach
  • 4 ounces Cream cheese
  • 1 cup Parmesan cheese
  • 2 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 1 cup Breadcrumbs
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Paprika (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Clean the mushrooms by gently wiping them with a damp cloth. Remove the stems and set the caps aside. Finely chop the stems.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushroom stems and cook for 3-4 minutes until softened.

Step 4

Add minced garlic to the skillet and sauté for 1 minute until fragrant.

Step 5

Stir in the fresh spinach and cook until wilted, approximately 2-3 minutes. Remove from heat and let cool slightly.

Step 6

In a medium bowl, combine the spinach mixture, cream cheese, 3/4 cup of Parmesan cheese, salt, and black pepper. Mix until fully combined.

Step 7

Brush the mushroom caps with the remaining olive oil and arrange them on the prepared baking sheet, open side up.

Step 8

Spoon the spinach mixture into each mushroom cap, packing it gently.

Step 9

In a small bowl, mix the breadcrumbs and the remaining Parmesan cheese. Sprinkle this mixture evenly over the stuffed mushrooms.

Step 10

Bake for 15-20 minutes, or until the mushrooms are tender and the tops are golden brown.

Step 11

Remove from the oven and let cool for a few minutes. Sprinkle with paprika for garnish, if desired, before serving.
