Ingredients

  • 500 g Button mushrooms
  • 1 large Onion
  • 2 Garlic cloves
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • 2 tbsp Hungarian sweet paprika
  • 1 tbsp All-purpose flour
  • 500 ml Vegetable broth
  • 125 ml Sour cream
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley

Directions

Step 1

Clean the mushrooms and slice them thinly. Peel and finely chop the onion and garlic.

Step 2

In a large skillet or saucepan, heat the butter and olive oil over medium heat until melted and sizzling.

Step 3

Add the chopped onion to the pan and sauté for 5–7 minutes, until softened and golden.

Step 4

Stir in the minced garlic and cook for 1–2 minutes, ensuring it doesn’t burn.

Step 5

Sprinkle the paprika over the onions and garlic, stirring for about 30 seconds to bring out its flavor.

Step 6

Add the sliced mushrooms and stir to coat them in the fragrant paprika mixture. Cook for 8–10 minutes, stirring occasionally, until the mushrooms release their moisture and begin to soften.

Step 7

Sprinkle the flour over the mushrooms and mix well, allowing the flour to cook for 1–2 minutes.

Step 8

Gradually pour in the vegetable broth while stirring to create a smooth, slightly thickened sauce.

Step 9

Reduce the heat to low and let the mixture simmer for 10 minutes, stirring occasionally, until the sauce thickens and the mushrooms become tender.

Step 10

Stir in the sour cream, then season with salt and black pepper to taste. Let the dish warm through for 2–3 minutes without boiling.

Step 11

Garnish with freshly chopped parsley before serving. Serve warm with bread dumplings, rice, or crusty bread.
