Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 small shallots, finely minced
  • 2 garlic cloves, minced
  • 8 ounces cremini mushrooms, sliced
  • 1 cup dry sherry
  • 1 cup heavy cream
  • 0.5 cup chicken or vegetable stock
  • 1 teaspoon fresh thyme, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground

Directions

Step 1

In a large skillet, melt the butter and olive oil over medium heat.

Step 2

Add the minced shallots and garlic to the skillet. Sauté for 2-3 minutes until softened and fragrant, being careful not to burn them.

Step 3

Stir in the sliced cremini mushrooms and cook for 5-7 minutes, or until the mushrooms have released their moisture and are golden brown.

Step 4

Pour in the dry sherry and let it simmer for 2-3 minutes, allowing the alcohol to cook off and the flavors to concentrate.

Step 5

Reduce the heat to low and stir in the heavy cream, chicken or vegetable stock, and chopped thyme. Simmer the sauce gently for 5 minutes to let it thicken and develop the flavors.

Step 6

Season the sauce with salt and freshly ground black pepper to taste.

Step 7

Serve warm over your favorite dishes such as steak, chicken, fish, or mashed potatoes.
