Ingredients

  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium-sized Shallot, finely minced
  • 2 cloves Garlic, minced
  • 8 ounces Mushrooms, sliced (such as cremini or button mushrooms)
  • 0.25 cup Dry white wine (optional)
  • 0.5 cup Beef or vegetable broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Fresh parsley, chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Heat a large skillet over medium heat and add butter and olive oil. Allow the butter to melt completely.

Step 2

Add the minced shallot and garlic to the skillet. Sauté for 1-2 minutes until fragrant and softened, being careful not to let the garlic burn.

Step 3

Stir in the sliced mushrooms. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and golden brown.

Step 4

If using, pour in the dry white wine to deglaze the pan. Stir and let it cook for 1-2 minutes until most of the liquid has evaporated.

Step 5

Add the beef or vegetable broth and bring the sauce to a simmer. Cook for another 2-3 minutes to slightly reduce the broth.

Step 6

Stir in the heavy cream and fresh thyme leaves. Let the mixture simmer gently for 3-4 minutes until it thickens to your desired consistency.

Step 7

Season the sauce with salt and black pepper to taste.

Step 8

Garnish with fresh chopped parsley, then remove from heat.

Step 9

Serve immediately over your favorite cut of steak.
