  • 500 grams button mushrooms
  • 50 grams unsalted butter
  • 1 tablespoon olive oil
  • 2 small shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme leaves, fresh or dried
  • 100 grams cream cheese, softened
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 tablespoon parsley, chopped (optional for garnish)

Directions

Step 1

Clean the mushrooms by brushing off any dirt with a damp paper towel. Trim the stems if needed and roughly chop the mushrooms into small pieces.

Step 2

In a large skillet, heat the butter and olive oil over medium heat until the butter melts and begins to bubble.

Step 3

Add the shallots to the skillet and sauté for 2-3 minutes until softened and translucent.

Step 4

Add the minced garlic and thyme leaves, cooking for an additional minute until fragrant.

Add the chopped mushrooms to the skillet and cook for 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and it cooks off. The mixture should be dry and flavorful.
