Ingredients

  • 300 grams Button mushrooms
  • 30 grams Unsalted butter
  • 1 tablespoon Olive oil
  • 2 medium Shallots
  • 2 Garlic cloves
  • 1 teaspoon Thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Heavy cream
  • 1 teaspoon Lemon juice

Directions

Step 1

Clean the button mushrooms with a damp paper towel and slice them thinly.

Step 2

Peel and finely chop the shallots and garlic cloves.

Step 3

In a large skillet, heat the olive oil and butter over medium heat until melted and slightly foamy.

Step 4

Add the chopped shallots and garlic to the pan, sautéing for 1-2 minutes until fragrant and softened.

Step 5

Add the sliced mushrooms to the skillet and stir to coat them in the oil and butter mixture.

Step 6

Sprinkle the thyme leaves, salt, and black pepper over the mushrooms, and cook for 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and turn golden brown.

Step 7

Reduce the heat to low and stir in the heavy cream, allowing it to simmer for 1-2 minutes to create a creamy consistency.

Step 8

Remove the skillet from the heat and let the mixture cool for 5 minutes.

Step 9

Transfer the mushroom mixture to a food processor or blender, and blend until smooth but slightly textured. Adjust the texture to your liking by adding a teaspoon of water if necessary.

Step 10

Stir in the lemon juice to brighten the flavors, and taste for seasoning. Adjust with more salt or pepper if needed.

Step 11

Transfer the mushroom paste to a bowl or airtight container. Serve immediately or refrigerate for up to 3 days.
