Ingredients

  • 12 oz fettuccine pasta
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 16 oz cremini mushrooms, thinly sliced
  • 1 cup dry white wine
  • 1 cup vegetable broth
  • 3 tbsp lemon juice, freshly squeezed
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 0.5 tsp red pepper flakes
  • 0.25 cup fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain the pasta, reserving 1 cup of pasta water, and set aside.

Step 2

In a large skillet, melt 2 tablespoons of butter with the olive oil over medium heat.

Step 3

Add the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the sliced cremini mushrooms to the skillet. Sprinkle with a pinch of salt and pepper, and sauté for 8-10 minutes until the mushrooms are golden brown and tender, stirring occasionally.

Step 5

Pour in the white wine and vegetable broth. Increase the heat slightly and let the mixture simmer for 3-4 minutes, reducing by about half.

Step 6

Lower the heat to medium and stir in the lemon juice and heavy cream. Allow the sauce to simmer gently for 2-3 minutes.

Step 7

Add the remaining 2 tablespoons of butter and stir until melted and fully incorporated into the sauce.

Step 8

Stir in the grated Parmesan cheese and red pepper flakes, mixing until the cheese is melted and the sauce is smooth.

Step 9

Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly, adding reserved pasta water as needed to loosen the sauce.

Step 10

Taste and adjust seasoning with additional salt and pepper as desired.

Step 11

Garnish with chopped parsley and serve immediately. Optionally, sprinkle extra Parmesan on top for added flavor.
