Ingredients

  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 8 ounces Cremini mushrooms, thinly sliced
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 cup Orzo pasta
  • 3 cups Vegetable broth
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Heat the unsalted butter and olive oil over medium heat in a large skillet or sauté pan.

Step 2

Add the diced onion and cook for 3-4 minutes, until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the sliced mushrooms to the pan and sauté for 5-7 minutes, stirring occasionally, until the mushrooms are softened and lightly browned.

Step 5

Sprinkle in the dried thyme and oregano, stirring to combine.

Step 6

Pour the orzo pasta into the pan and toast it for 2-3 minutes, stirring frequently, until it starts to turn golden.

Step 7

Slowly add the vegetable broth to the pan, stirring to deglaze any browned bits from the bottom of the pan.

Step 10

Taste and adjust the seasoning with salt and black pepper, as needed.

Step 11

Serve warm, garnished with additional parsley or Parmesan cheese if desired.
