Ingredients

  • 4 large caps Portobello mushrooms
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 ounces Cream cheese
  • 2 tablespoons, chopped Fresh parsley
  • 0.5 teaspoon Garlic powder
  • 4 cups Spinach
  • 1 tablespoon Butter
  • 0.5 cup Breadcrumbs
  • 2 tablespoons, grated Parmesan cheese
  • 2 tablespoons Balsamic glaze

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Brush the portobello mushroom caps with 1 tablespoon of olive oil and sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Place them gill-side up on the baking sheet and roast for 15 minutes.

Step 3

Meanwhile, in a small bowl, mix the cream cheese, chopped parsley, garlic powder, and the remaining 1/4 teaspoon of black pepper. Set aside.

Heat a skillet over medium heat and add the butter. Once melted, add the spinach and cook until wilted, about 2-3 minutes. Season with a pinch of salt.
